The entire design of those things is built on the idea that the owner gets tracked, the security is minimal, privacy is non-existent, the owner's control is limited on the device, that the owner is a cash-cow, and that the operation of the device is as less transparent and exploiting to the user as possible.
So, are you sure that the buttons do what they advertise, at least when it comes to privacy and security? I am not.
On top of that, in my country the providers have INSANE policies that charge the owner as much as possible, even if he doesn't use the phone.
Oh, and on top of that, the UX is horrible. I've made the mistake of buying a tablet with Android, and I have also used an iPad Air of a friend, and I would have to say that, I will never criticize M$ ever again on UX or security or privacy. Mobile OSes have hit the bottom of all bottoms...
And how about ads... What kind of moron would pay for a device that serves him ads via all installed applications?
And how about the irradiation? Not to mention that most of those devices don't even support wired connections properly or at all.
And how about the short lifetime/support of the device compared to the amount of money spent?
And how about the fact that there is an entire business sector focused on LEGALLY selling exploits to governments and international criminals for these devices?
You cannot hide the facts: these devices were created for stupid people.
For sure, having access to the internet comes handy at times, but this is not the kind of access I would be willing to pay for. These devices give more access to others on you, than giving access to you on the world.
Your definition of "paranoid" is my definition of "not stupid".
I am sure people can make money out of anything, including extortion, human organ trafficking, selling carcinogenic pesticides to ignorant people, selling their own kidneys for money, etc. But that doesn't make it good for society or for themselves.
Also, you are confusing mobile phones with the internet...
You can use the internet without a mobile phone.
And the internet has become worse due to mobile phones, for various reasons.
I am not against empowering people with technology. I am against giving some limited power to people in order to screw them over. This is what the mobile industry does, in every way possible.
I am sure you find what mobile phones provide appealing, but what you enjoy is not even 1% of what mobile phones do, and the remaining 99% is bad for you or is used against you by people you have not even met.
This has nothing to do with me being paranoid or not. This is about realizing you are being used. Perhaps you don't understand how this happens, or what would motivate mobile companies to do this, but reality is not limited to our understanding.
I would gladly use a device with capabilities similar to those of mobile phones, if it was designed properly. But mobile phones and their networks are not designed properly at all. And in order to persuade you that their design is a risk to you, I would certainly have to write a whole book.
I would suggest taking a deeper dive into technology and into how things work when it comes to phones and computers. Then you will understand what the true power of those machines is, and how dangerous they can be.
Mobile phones are for stupid people.
Who in their right mind wants to be accessible 24/7, tracked 24/7, online 24/7, irradiated 24/7, babysitting a device 24/7.
Yes, only stupid people.
That takes away only parts of the problem.

You seem to believe that I worry about something...
I am not.
I don't own a mobile phone.
I never care for charging it.
I never care for paying its bills.
I never care for stupid ads popping up in front of my eyes.
I never care for anything.
I have never needed a mobile phone in my entire life.
If I ever need something, like GPS, I still have a tablet around, but I've never really needed it either.
Whenever someone asks for my mobile phone, I just flip the bird to him.
And I still have access to the internet.
But I guess I am jealous of the people that have managed to find so many willing cash-cows to milk...
